As first written about in this article by our very own Kerri Mac, David's Taphouse and Dumplings will soon be opening in Cedar Falls.

Since Kerri's first story, we've learned a little bit more about what the Cedar Valley's newest restaurant, AND it's owner!

As reported by the Northern Iowan, UNI's student newspaper (where ya boy was once upon a time the sports editor, #EverLoyal), a current professor at the local university is the entrepreneur and businessman to forge together David's Taphouse and Dumplings.

Andy Anderson, an associate professor of management in the college of business, decided it was time to go after a goal he's had and took the leap of faith. Located at the corner of West 1st and Washington St., the establishment plans to open officially in late October, according to their website. 

Anderson, who studied at UNI and later briefly lived in China with his wife Yi Cheng, returned to Cedar Falls to teach college students in 2013. Having had the background of visiting the far east, he spent time with his wife's family, including one specific memory he has over the Chinese New Year:

“I don’t know what it was,”

Anderson told Olivia Brusting of the NI.

“The shells were handmade and rolled, and all the fillings were handmade. You know, everything was perfect and everybody was sort of pitching in. I almost ate fifty dumplings that day.” 

In regards to who is making those dumplings and how, Anderson had this to say: "We have a chef. Her name is Chef Tia,” Anderson explained. “She’s from China, made dumplings her whole life like it’s in her blood. And she has a great background and (enjoys) taking a scientific approach to things, and she loves cooking. Then our other manager is a classically French-trained chef. So putting the traditional Chinese with the classical French-trained chef, these dumplings are good.” 

While the restaurant's owner is invested in making top-tier food, another focus for him is making David’s Taphouse and Dumplings a family-friendly environment. Included in the space is "a giant Connect Four with custom David’s Taphouse and Dumplings discs. There are also the options of playing basketball on a full-sized basketball hoop or on a Pop-A-Shot that’s themed around Sue, their unforgettable six feet, 10 inches tall Lego dinosaur. If that’s not enough Legos, there’s also an area dedicated to Lego construction with tables and even a wall where these building blocks can attach to it."

An extensive list of beer options are available for customers over 21 as well. The restaurant will partner with Toppling Goliath Brewing Co., a brewery in Decorah that was founded in 2009. The brewing company creates more than 40 beers that rotate throughout the year. According to the company's site, Toppling Goliath Brewing Co. "has been named the #2 brewery in the world by Beer Advocate. Our barrel-aged stout, Kentucky Brunch Brand Stout, has held the title of #1 beer in the world since 2015."

David’s Taphouse will be open from 11 a.m.-9 p.m. on Sundays, Wednesdays and Thursdays. On Fridays and Saturdays, they’ll be open from 11 a.m.-10 p.m. For Mondays and Tuesdays, they’ll have their ghost kitchen from 4-8 p.m., where food and drinks will be available for pickup or delivery.
