Don't let anyone fool you, today (April 1st) is National Burrito Day, a day to celebrate one of the most widely eaten Mexican dishes across the globe. It's even fun to say. Say it out loud with me, "burrr--reeee---toeee...see I told you.

Anyway, a little history lesson before we get to our list of the "Best Burritos in the Cedar Valley". According to National Today "Burrito" first appeared in the Dictionary of Mexicanisms in 1895. Get this, it loosely translates to "little donkey," in Spanish. It's possible the term refers to the packs and bedrolls donkeys once carried. Burritos first started showing up on American menus in California in the 1930's. My family likes to make "breakfast burritos" (filled with scrambled eggs, bacon, sausage, cheese, etc...) quite often, which make it hard for me to believe that they weren't invented until 1975 in Sante Fe, New Mexico.

Burritos are great, first of all, because you can eat them with your hands, and second of all, because you can put almost anything in them. Start with a lot of meat, (the more, the better) chicken, beef, pork or steak. Then fill it up with beans, rice, salsa, cheese, lettuce, sour cream, vegetables and anything else you can think of to add to it, even french fries. Except for those cheap frozen burritos you can find in your grocer's freezer, those are truly disgusting.
